bacon chocolate chip cookies

So yeah. Bacon. Lovely, crispy, goodness. That loveliness that releases pure liquid gold. Oh, and chocolate. Perfect marriage.

I’ve told you guys before how I love the Southern Cast Iron magazine, and this came from the new Spring 2017 edition. If you love bacon as much as I do then you’ll want to try and get this edition. It has an entire section featuring bacon and they all look incredible.

I saw this recipe and knew I had to make it. It did not let me down. I’m pretty sure it won’t let you down either.

CHOCOLATE CHIP BACON COOKIES

Ingredients:

1/2 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed brown sugar
1/2 cup chilled bacon squeezins (drippings)
1 teaspoon vanilla extract
2 large eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) package bacon, cooked and crumbled (I used maple)
3 cups bittersweet chocolate morsels
flaked sea salt for garnish

Directions:

– Preheat oven to 375°.

– In a large bowl, beat butter, sugars, bacon drippings, and vanilla with a mixer at medium speed until fluffy, scraping down the sides if needed. Add the eggs, one at a time, beating well after each addition.

– In a medium bowl combine the flour, baking soda, and salt. Gradually add flour mixture to butter mixture, until combined. Stir in bacon and chocolate morsels. Drop on baking sheet or cast iron pizza pan using a 1 1/2 inch scoop, 2 inches apart.

– Bake until the edges are brown, 9-13 minutes. Remove and cool on wire rack. Garnish with sea salt, optional.

  1. It is very good and not nearly as bacon-ny as you would expect. Even with the drippings. It seems to come together like they were from the same womb.
