Delicious Slow Cooker Black-Eyed Pea Stew Recipe
Guys, I love a good slow cooker meal. That feeling when supper’s already done and you don’t have to cook after a long day? Elite-level laziness and I fully support it.
I also love black-eyed peas… which is surprising because “management” usually doesn’t. But after trying this stew at a friend’s house, I begged for the recipe for about six months straight.
Now we make it constantly. Once every couple of weeks constantly.
The slow cooker completely changes the black-eyed peas. They lose most of that earthy flavor and soak up all the smoky sausage, spices, and broth instead. It turns into one of those ridiculously simple comfort meals that tastes way better than it has any right to.
And if you throw some hot cornbread next to it?
Forget about it.

Slow Cooker Black-Eyed Pea Stew
This slow cooker black-eyed pea stew is an easy, throw it together recipe that culminates into beany magic!
Ingredients
- 4 15.5 ounce cans black-eyed peas 3 drained, 1 with juices
- 1 lb smoked sausage, sliced use your favorite, I like Conecuh
- 1 small onion, chopped
- 1 10 ounce can Rotel or similar tomatoes with green chilis
- 1 tablespoon cajun seasoning of your choice
- 1 teaspoon garlic powder
- 3-4 shakes Worcestershire sauce
- 2 cups chicken broth or 1 T Better than Bouillon + 2 cups water
Instructions
-
If your slow cooker sautes/browns, set it to that and heat it up. If you don't have a fancy slow cooker, heat a skillet over medium/high heat.
When hot add in the sausage and onion. Brown up the sausage. The onion will soften. We're not looking for anything but browning flavor goodness here.
-
While the sausage is browning up, drain 3 cans of black-eyed peas. You don't have to rinse, just drain. Add it to the slow cooker with the remaining can of black-eyed peas WITH JUICE.
To the peas, add in the cajun seasoning, garlic powder, Worcestershire sauce, Rotel and chicken broth.
When the sausage is browned to your liking, add it and the onions to your slow cooker. I like to add the sausage drippings. If you find it's too much grease, some but not all. Use your best judgement.
Give it a stir about.
-
Cook on low 4-6 hours. If you don't come home for 8 hours, no harm done. It'll still be perfect.

Recipe Notes
- Sometimes I eat this over a bit of white rice, sometimes I don’t. It’s not necessary but it is delicious.
