Instant Pot potato salad is just about the easiest pressure cooker recipe you will ever find. But what a game changer! You throw the eggs and potatoes all at once, pressure and that’s it!

This recipe is more about the method to cook this in your Instant Pot or whatever pressure cooker you have. Check out the notes to see what I add to mine, but man, people are very particular about what they put in their potato salad. So make this your own and add whatever you want to it.

You know me, I just gotta give you a but wait paragraph. There are two methods for the eggs. The first, you just lay them on top of the potatoes, when they’re done, peel. The second is to crack the eggs into an oven safe vessel or my favorite, these stackable pans, and lay it on top of the potatoes. Same time and everything, but you don’t have anything to peel. Just plop them on a cutting board and mash with a fork, cut with a knife, or my favorite, press a cookie cooling rack over the egg cake and do it all in one swoop!

Instant Pot Potato Salad

Course Side Dish

Ingredients

  • 1.5 cups water
  • eggs
  • 6 med/large potatoes cut into chunks
  • condiments of your choice to personalize

Instructions

  1. Add the 1.5 cups of water to your pressure cooker.

  2. Place the steamer basket in the pot.

  3. Place the potatoes in the basket and then place the eggs on top.

    Pressure on high for 4 minutes. When the 4 minutes are up, QUICK RELEASE the pressure. We don't want those potatoes getting mushy.

  4. Carefully remove the steamer basket and put the potatoes and peeled cut eggs into a large bowl. Dress however you dig your potato salad.

Recipe Notes

As I said above, this is more about the method in the Instant Pot.  I didn’t give specifics about what to put in the potato salad.  I have found that is a very personal thing and can potentially start a war.  

What I like to put in mine, you might not like, but I’ll tell you what I do: Add mayo, mustard, sweet relish, salt and pepper, shake of hot sauce, maybe some dill if I have it, maybe some bacon if I have it and maybe some red onion if I have it.  See, it’s loose, but by all means, put what you want. Cream cheese, no mustard (I know people are very particular about that), what ever.

  1. I love how much you have simplified potato salad! I would never have thought to cook the eggs and potatoes at the same time. I don’t have an instant pot, but I will definitely be checking this method out in my pressure cooker!
