It’s that time guys. It’s time for the beach. It’s time for going out on my SUP. What I really mean is it’s time for the heat. It’s time to sweat. The soup, stews, and roasting will have to be put on hold until fall. Not the soups, my wife will cook a soup even when it’s 150° outside. But we really just try not to heat up the kitchen. We move to lighter food so it doesn’t beat us down in the heat. You all know what I’m saying. Anyway, this is perfect for those nights in the summer…
Shakshuka
My go-to breakfast? Eggs almost always. Usually, it’s a very, very simple heuvos rancheros with the Mission super thin corn tortillas. Eggs just last me all day…Well, until noon at least. Even though the cholesterol police – wife – wants to stuff oatmeal in my face, she is satisfied as long as I eat eggs and beans. Huevos rancheros is quick and mindless. Shakshuka is what we have when we have a little more time on our hands. Not that it takes that long, but it does require a tiny bit of prep and simmering time. Not much though, don’t be…
Red Lentil Sweet Potato Dal
I have another lovely, truly lovely backpacking meal that you can dehydrate or…yes…Eat it for dinner tonight! When I make food to take hiking, a few of my go-to’s are vegetarian. Meatless meals just make my body happy and they dehydrate really well. They weigh practically nothing and when you’re hiking 15, 20 miles a day, that’s a biggie. But taste counts too…alot. After hiking all day the last thing I want to do is eat rehydrated cardboard because real talk – I’m crazy-man hungry! This dal is something that I may cook for lunch or supper at home and…
Faux Jack in the Box Tacos
Faux Jack In The Box Tacos? Ridiculous sounding, I know. But yeah, it’s a part of my life, a delicious one I want to share with you. Maybe you’ve found yourself in the same disheartening situation as I did… When I was younger, I would smash my face into Jack In The Box tacos every chance I got. Monster tacos to be exact. Something about that questionable meat, the greasy fried goodness in that big shell. Good times. But, we don’t have one here in Mobile, Alabama. The nearest one is Baton Rouge. Not that far, true, but too far…
Beet Salad Napoleon
I love cool foods in the summer. Conch ceviche, shrimp, salads, and now this gorgeous beet and goat cheese stack. There was this one time, I was in Key West, actually it was only three months ago. I was in Key West and believe it or not, I had no idea where to go eat for dinner. I had been to every place (or so I thought) and just didn’t really have a feel for anything. Doesn’t sound like a problem that garners a lot of sympathy, I know. So here I was hungry and hot, because Key West is…
Santa Fe Cheesy Beans and Rice
So if you know anything about me, you know that I’m always on the lookout for some awesome tasty recipes for backpacking meals. If you don’t know me, then let me just say this, I have tried a ton of DIY backpacking meals, some of them good some of them not so good. I’m always reluctant to share the good ones. Not that I’m being selfish it’s because, well frankly, it’s because the good ones are just that. Good. Not great. If I do run across a great one, then I’m gonna share it with you. Which is why I’m…
