Everyone wants to eat good on the trail or when camping – I know I do! Let me tell ya, chicken marbella is some good eats! Chicken marbella is just solid, man, it’s a solid recipe. It’s not like a freeze dried, store-bought meal, like Mountain House, where you eat it and you still have this hole you want to fill. It’s just satisfying. And it’s totally packable too – let me tell you how it’s done… Oh, and you don’t have to eat this just on trail. Delicious at home or anytime!
Backcountry Jambalaya – Trail Food
Backcountry jambalaya is my attempt to stay on schedule with my once a month backpacking meal series. I think I’m doing great so far…two straight months in a row. Yay me! I only made this declaration of a once a month meal series about, oh, 10 months ago, so… Yeah. But I’m here for month two and I’m telling you, I’ve outdone myself. Seriously. Jambalaya doesn’t seem like something one would have while out on the trail, I know, but once I got this recipe right, I feel bad for myself that I’ve not made this sooner. The wife and I…
Chicken Tortellini with Sun-Dried Tomatoes
Creamy, delicious tortellini with dried tomatoes and chicken. You’re gonna love this! I know you guys, I’m a little behind on this “once a month backpacking meal recipe” thingy! Give me a small break on this. It’s only been 5011 degrees here. Just firing up an alcohol stove can give you heat stroke. That being said, the wait is worth it. I think you’re gonna like if not love this recipe and it’s Management approved. What I have realized is that if I can get a wink and a nod from Management, then I’m good to go. Truth time. In…
Faux Biscuits & Gravy
Why faux? Well, because the “biscuits” are gnocchi and the “sausage” is Morningstar Farms fake meat breakfast sausage. Taste just like sausage by the way and you can find it in the hippie section of your local grocery store. I love real life biscuits and gravy. I love Mountain House’s biscuits and gravy. I can’t take real biscuits and gravy on the trail and Mountain House’s, well, it’s expensive for what it is and it’s like Chinese food – you’re hungry an hour after you eat it. So I decided to make my own. You may not like fake meats.…
Red Lentil Sweet Potato Dal
I have another lovely, truly lovely backpacking meal that you can dehydrate or…yes…Eat it for dinner tonight! When I make food to take hiking, a few of my go-to’s are vegetarian. Meatless meals just make my body happy and they dehydrate really well. They weigh practically nothing and when you’re hiking 15, 20 miles a day, that’s a biggie. But taste counts too…alot. After hiking all day the last thing I want to do is eat rehydrated cardboard because real talk – I’m crazy-man hungry! This dal is something that I may cook for lunch or supper at home and…
Alabama Style BBQ Spaghetti – Backpacking Meal or Tonight’s Dinner
I’m getting ready guys. I’m just waiting for the weather to ease up a bit (it was 92 here yesterday and hot as the devil’s balls), so I can head out in the woods for a week. While I’m waiting, I’m getting my food situation together. Nothing against store bought dehydrated meals. I’m a big fan of Heather’s Choice for her delicious, nutritious meals. I love PackitGourmet – the chicken and dumplings and gumbo are seriously delicious. I’ll even throw in a Mountain House meal every now and then. But it gets old. And unless it’s Heather’s Choice, after a few…
Santa Fe Cheesy Beans and Rice
So if you know anything about me, you know that I’m always on the lookout for some awesome tasty recipes for backpacking meals. If you don’t know me, then let me just say this, I have tried a ton of DIY backpacking meals, some of them good some of them not so good. I’m always reluctant to share the good ones. Not that I’m being selfish it’s because, well frankly, it’s because the good ones are just that. Good. Not great. If I do run across a great one, then I’m gonna share it with you. Which is why I’m…
Bush Bannock
I just got back from a little local excursion to test some gear and while there I made some bush bannock. No, clear your mind, it’s not that bush. It’s the bush as in outside, in nature. So what is bannock? Well, basically it’s a round flat cake/bread originating in Scotland, made from grain and baked on a griddle. It’s been around for ages too. Its first cited use was in 1000. If you’re interested and want to know more (and let’s face it, who wouldn’t?) Wikipedia is here for you. Aside from being old as dirt, it’s easy, quick, and…
